Lupin Beans Hummus

Soak the lupin beans for a couple of days, changing the water daily to remove bitterness and soften them for faster cooking. Why bother with this extra step when canned beans are fast and easy? In addition to being organically and locally grown by Fagraslätt, the lupin or lupini bean, a yellow legume from the genus Lupinus, is not widely available in Sweden. These unusual beans are high in protein but have a comparatively low carb count. Try this delicious low carb hummus. It’s worth the extra effort of starting with local, dried beans!

Ingredients:

2 cups cooked lupin beans

1 clove of garlic

1/2 tsp of salt

1/4 cup of olive oil

1/3 cup of tahini

The juice of one lemon

A few ice cubes for smoother texture

Ground cumin, coriander or cayenne pepper to garnish

Instructions:

1. Strain the cooked lupini beans, reserving some of the cooking water in case a thinner hummus is desired.

2. Peel and chop the clove of garlic.

3. Juice the lemon. Use only ½ the juice initially, adding more to taste.

4. Add the ingredients to the blender or food processor and puree until smooth. A

few ice cubes blended with the mixture makes for a smoother texture.

5. Add a little more olive oil or some of the reserved cooking water to thin the mix.

6. Sample the mixture and adjust lemon, salt and tahini to taste.

7. Garnish with spices and a swirl of oil or use as a sandwich spread.

8. Enjoy approximately 9g of protein and 6g net carbohydrate per serving!

Heart-Shaped Waffles

Ingredients:

2 eggs

50 g caster sugar

250 ml milk 

250 g wheat flour

2 tsp. teaspoon baking powder (11g)

1 tsp vanilla sugar1

pinch of salt

75 g melted unsalted butter

Instructions:

1- Mix well the eggs and sugar. Then add the milk. Mix

2- Add the flour, baking powder, vanilla sugar and salt. Mix well. 

3- Add the melted butter and mix again. Let rest for 30 mn/1h if possible.

4- Heat your waffle iron. Spread some batter. Let it cook for about 3 minutes (or whatever your waffle iron says!) until the waffles are golden brown and cooked all the way through. Repeat until you are out of batter.

5- Enjoy with your favourite topping: some jam, honey, whipped cream, nutella or just icing sugar.

Quinoa and red lentils curry

Ingredients:

80 g white onion

2 cloves garlic

200 g fresh tomatoes or canned chopped tomatoes

30 g olive oil

5 to 10 g curry powder

100 g quinoa

100 g coral lentils

300 g water

A pinch of cumin seeds

½ - 1 tsp. salt, to be adjusted according to taste

Instructions:

1- Chop onions and garlic then put them in a bowl.

2- Chop tomatoes or canned chopped tomatoes. Add to the bowl. Add curry powder and mix.

3- Heat olive oil in the pan. Add the tomatoes mix and cook for 5mn.

4- Rinse the quinoa and coral lentils under cold water, then add them to the pan.

5- Add water, cumin seeds, and salt and cook for 12 min. Mix often.

6- Serve hot.
